Observation helps you by allowing you to see and document how a child is progressing and developing. This is important in a classroom setting because it allows you to gear the way you interact with that child depending on where they are developmentally.

Serve and return is done when playing with toys; a child hands me the toy, we play with it together, and then I return it to the child so that they can play with it themselves.
